Fruitcake
My mother never made fruitcake. Instead she made fruitcake cookies. They were amazing good. I wish I had the recipe but I don't. So, I thought to myself, why not make an actual fruitcake? I know. I know. Fruitcakes have been ridiculed and feared for over a century. But I want to try it. So, I'm reviewing recipes and, I hope, shall have something good to report back here during the 12 days.

Hi, Matt. I have a fruitcake recipe I can give you if you would like it. People who hate regular fruitcake seem to really like this one. I think I got it (40 years ago) from Sunset magazine. Aunt Nettie even uses my recipe. Let me know if you want the recipe. Aunt J
Here's the recipe: "Inexpensive Fruitcake"
1 1/2 cups chopped dates
2 cups sugar
1 1/2 cups boiling water
5 Tbsp. shortening (Crisco)
Simmer above ingredients for 20 minutes. Cool and add:
3 cups flour
2 tsp. cinnamon
1 tsp. each: cloves, baking soda & salt
Add nuts (I use walnuts)
and candied fruits (I use everything except the citron) Bake @275 for 2 hours.
Good luck with it...I think you'll like it.
Thank you! I am so happy you gave me this.
My grandmother makes one every year. Thankfully, my oldest loves it.
Aunt, Joann. How long will this fruitcake stay fresh?
I know. Weir punctuation. Let me try again.
Aunt Joann, how long will this fruitcake stay fresh? If I mail it to someone will it arrive fresh enough to eat?
